Supreme Granola

This is my master granola recipe. I sell a tremendous amount of it at my cafe, both from the menu and in retail bags to take home…alot of it!

This is also personally my favourite granola; however I do make two other versions that veer even healthier (to be posted at a later time). This version is lightly sweet and studded with nuts, seeds coconut and dried fruit.

It stores very well in a glass container in the pantry or fridge…it rarely lasts too long though!

Makes Approximately 12-14 Cups

INGREDIENTS

1 Cup Unsalted Butter

1/2 Cup Organic Coconut Oil

1/4 Cup Packed Brown Sugar

1/4 Cup Best Quality Maple Syrup

1/2 Cup Liquid Honey

2 tsp Pure Vanilla

1 tsp Salt

1 tsp Ground Cinnamon

1/2 tsp Ground Cardamon

5 Cups Whole Rolled Oats

1 1/4 Cups Chopped Pecans

1 1/4 Cups Unsweetened Shredded or Flaked Coconut

1 Cup Raw Unsalted Pumpkin Seeds

1 Cup Raw Unsalted Sunflower Seeds

1/2 Cup Chia Seeds

1/2 Cup Whole Flax Seeds

1 Cup Dried Tart Cherries

1 Cup Dried Apricots, Chopped

1/2 Cup Sultana Raisins

METHOD

Preheat oven to 350.

In a large saucepot bring butter, coconut oil, brown sugar, maple syrup, honey, vanilla, spices and salt to a low boil until everything is melted and sugar has dissolved. Set aside and let cool slightly.

In a large bowl mix oats, pecans, coconut and seeds until well distributed. Gently pour liquid over dry mix and combine well (be careful, liquid may still be hot for you hands).

Prepare a large sheet pan by lining it with parchment paper. Gently pour out and spread the granola in an even layer on pan. Bake for 8 minutes. Pull out tray and stir the granola with a spatula to encourage even browning, make sure its redistributed back into an even layer. Put tray back in oven for another 8-10 minutes until granola is golden brown all over.

While granola is finishing baking, mix dried fruit in a bowl.

Remove granola from oven and cool. If you like crumbly small pieces of granola break it up after it cools for about 5-7 minutes (cool enough to touch and break apart/crumble easily between your hands). If you prefer larger chunks/shards of granola, let cool completely and than break/snap by hand.

Once the cooled granola is the consistency you like add all the dried fruit and mix well. Store in a glass jar or canister in the pantry or fridge. Serve with yogurt or milk and fresh fruit. If you choose to break your granola into the larger chunks/shards, it makes a great on the go snack!
