TIGANITES

Makes 10-12

1 tsp Dry Active Yeast

1 Tbsp Honey

400 ml Warm Water

100 Grams Plain Greek Yogurt

240 Grams All Purpose Flour

Pinch of Sea Salt

1 tsp Vanilla

1 tsp Ground Cinnamon

2 Heaped Tbsp Toasted Walnuts, Finely Chopped

Canola Oil for Frying

Greek Yogurt for Topping

Toasted Walnuts for Garnish

Honey For Garnish

In a large bowl combine the yeast, honey and warm water. Allow to sit for 5 minutes to bloom the yeast (until foamy).

Add in the yogurt, flour, salt, vanilla, cinnamon, toasted walnuts and whisk until smooth.

Set the batter aside for 25-30 minutes.

Heat your griddle over medium high heat and coat with a thin layer of oil. Once the oil is hot, spoon the batter - about 2-3 tablespoons per Tiganite - onto the griddle. Cook on each side until golden brown.

Keep warm in a low oven until ready to serve.

Serve with a generous dollop of thick greek yogurt, a sprinkle of toasted walnuts and a healthy drizzle of best quality honey.
