spiced wood press cookies

Makes 15-18 (Depending on Press Size)

125 grams melted butter

100 grams white sugar

1 tsp vanilla

200 grams molasses or treacle

1 large egg

320 grams all purpose flour

1/2 tsp baking soda

good pinch of salt

1 tbsp ground ginger

2 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground clove

In a large bowl, whisk the melted butter, sugar, vanilla, molasses and egg

In a separate bowl, whisk the flour, baking soda, salt and spices together

Add the wet to the dry and stir to combine into a stiff dough

Portion off small balls of dough (size will depend on the size of your wood press)

generously spray the wood press with canola spray. press the dough into the mould, being sure to not have overhang (outside of the press lines)

firmy tap the wood press on a work surface to release the shaped cookies (this may take a few swift raps on the counter)

place the shaped cookies on to a parchment lined tray and chill for 15 minutes

preheat oven to 350F

bake the cookies for 15-18 minutes

allow to cool before decorating with a dusting of icing sugar or a thin brushing of glaze icing (icing sugar thinned with water or cream)
