Linzer cookies

Makes 25-40 Mini Heart Sandwich Cookies

340 Grams Softened Unsalted Butter

200 grams white sugar

2 tsp vanilla

300 Grams all purpose flour

120 grams almond flour

1/2 tsp salt

raspberry jam

In a food processor, pulse all of the ingredients ,with the exception of the jam, together until a firm dough forms

Place the dough on a large piece of plastic cling film and wrap securely. Chill for 20 - 30 minutes

roll the dough out to a 1/4 inch thick. using a small heart shaped cutter, punch out several hearts and place on a parchment lined tray. Re-roll the dough and continue punching out hearts

chill hearts for 15 minutes

preheat oven to 350f

bake for 8 minutes, rotate the pan and bake for 4 minutes more

cool completely

place a small teaspoon of jam on the underside of one cookie. top with another cookie and dust liberally with icing sugar
