Carottes Râpées
1lb Carrots, Washed and Trimmed
100 Grams Raisins or Sultanas or Currants
3 Tbsp Olive Oil
Zest and Juice of 1 Large Orange
Juice of 1 Lemon
Salt and Pepper
2 tsp Dijon Mustard
2-3 Tbsp Liquid Honey
Small Handful Finely Chopped Parsley or Chervil
SOAK THE RAISINS IN A SMALL BOWL OF WARM WATER FOR 10-15 MINUTES
GRATE THE CARROTS ON A BOX GRATER OR IN A FOOD PROCESSOR,USING THE GRATER INSERT
WHISK TOGETHER THE REMAINING INGREDIENTS IN A LARGE BOWL
DRAIN THE RAISINS AND ADD TO THE BOWL, ALONG WITH THE GRATED CARROTS. STIR/TOSS WELL TO COMBINE
CHILL UNTIL SERVICE
