brown butter granola

makes 12-15 servings

120 grams unsalted butter

75 ml grapeseed oil

40 grams brown sugar

75ml good maple syrup

2 tsp vanilla

good pinch of salt

1 heaped tsp ground cinnamon

1/2 tsp ground cardamon

1/4 tsp ground allspice

270 grams rolled oats

100 grams hazelnuts

100 grams sultanas

In a small pan, melt the butter until light golden brown. add the maple syrup, oil, brown sugar and vanilla.

in a larger bowl, add the oats, salt, spices and hazelnuts

pour the butter mixture over the oats and stir to combine

preheat oven to 350F

evenly spread the granola on a parchment lined pan

bake for 12-15 minutes, then stir/toss around to ensure even browning

bake for a further 6-8 minutes until dark golden brown and fragrant

allow to cool slightly before adding the sultanas. toss to combine, breaking down the peices of granola to your desired texture/size

keep stored in a glass canister for up to 4 weeks
