Pastry is a passion and at times a torrid love affair. Traditional European pastry takes time, patience and immense attention to detail. What I love most about it however, is that it requires an engagement of all my senses. When striving to prepare the most authentic pastry experience, the smell, look, feel and taste are all crucial; from the start of the process to the finished result.
I have loved studying pastry history and technique at length. I focused on very old recipes. My goal was to learn how traditional pastries like croissants and tartes were made hundreds of years ago and if the process and ingredients used then, could be applied to modern technique/tools and ultimately produce a better product than your average bakery or grocery store product. Years of research and experiment concludes that it does!
The pastries at enid grace cafe are all made in house. Real butter and dairy, the best chocolate, fresh eggs and real fruit. The best ingredients in all instances!
