Pastry is a passion and at times a torrid love affair. Traditional European pastry takes time, patience and immense attention to detail. What I love most about it however, is that it requires an engagement of all my senses. When striving to prepare the most authentic pastry experience, the smell, look, feel and taste are all crucial; from the start of the process to the finished result.
I have loved studying pastry history and technique at length. I focused on very old recipes. My goal was to learn how traditional pastries like croissants and tartes were made hundreds of years ago and if the process and ingredients used then, could be applied to modern technique and ultimately produce a better product than current day palettes were used to. Years of research and experiment concludes that it does!
